Jonathan Payne brings over two decades of global hospitality leadership to his role as Resort Manager at Sugar Beach, A Viceroy Resort. With a career spanning luxury properties across the Caribbean, Southeast Asia, Africa, and the UK, Jonathan has held key leadership positions at renowned destinations including Sandy Lane in Barbados, Coco Bodu Hithi in the Maldives, and various resorts under the Minor Hotel Group and Centara Hotels. Jonathan brings with him a commitment to excellence and guest-centric leadership.

Our accommodations are designed to seamlessly blend luxury with the natural beauty of our surroundings. Inspired by colonial Caribbean architecture and framed by lush rainforest and the Pitons, each room, villa, and residence offers an elegant yet understated escape. CAN YOU TELL US A LITTLE ABOUT YOUR CULINARY OFFERINGS & FAVORITE DISHES?
Our culinary program celebrates global flavors while remaining deeply rooted in the spirit of St. Lucia. Across our diverse dining venues, guests can explore everything from fine dining to relaxed beachfront bites. Saltwood is a standout for its refined steak tasting plate, a guest favorite. At Cane Bar, you’ll find artfully prepared sushi and Asian-inspired small plates perfect for sharing. Bonté Restaurant offers bold Creole flavors, including traditional Curried Goat and our ever-popular Fish Fry. For lovers of grilled fare, Jalousie Grill serves fresh-caught fish and premium meats over a Josper grill, infusing each dish with incredible depth of flavor. And of course, no visit is complete without our infamous smashed Jetty Burgers at South Pier, a laid-back favorite that keeps guests coming back for more.
WHICH EXCURSIONS WOULD YOU RECOMMEND TO CREATE THE PERFECT ST. LUCIA EXPERIENCE?
St. Lucia offers an incredible range of experiences, and we’re fortunate to be located right in the heart of it all. A visit to the Sulphur Springs, known as the world’s only drive-in volcano, is a must, guests love soaking in the mineral-rich mud baths, believed to have healing properties. For adventure seekers, a guided hike up the Gros Piton provides panoramic views and a real sense of achievement. And to experience the island from another perspective, we highly recommend a private boat excursion to explore hidden beaches, snorkeling spots, and the stunning coastline.
WHAT ARE SOME OF YOUR FAVORITE GUEST EXPERIENCES AT THE RESORT?
Our Cocoa Mill experience is a guest favorite, it offers a hands-on look at St. Lucia’s deep-rooted chocolate heritage, with rum and chocolate pairings as well as interactive chocolate-making classes. The Rainforest Spa, nestled in the lush jungle, offers treatments that are deeply restorative and surrounded by nature at its most serene. For ocean lovers, our PADI-certified dive centre opens the door to unforgettable underwater adventures, and some of St. Lucia’s best snorkeling can be found right off our shores, where vibrant marine life and coral reefs are just steps away. For something truly unique, guests can also enjoy a night snorkeling experience, where glowing coral and nocturnal marine creatures create an entirely new perspective of the reef after dark.
WHAT’S YOUR FAVORITE PLACE TO HAVE COFFEE IN THE MORNING?
For me, there is nothing quite like starting the day with a fresh coffee from our Boopa’s grab-and-go café and sipping it from one of the terraces at the Great House. From there, you can soak in those sea views and watch the sun rise over the Piton’s.
WHERE IS THE POSTCARD SHOT ON PROPERTY?
It’s hard to choose—there are very few spots on property that don’t offer stunning views. That said, a personal favorite would be the view from the main Sugar Beach, with the majestic Gros Piton rising in the background.
What are you most proud of AT THE RESORT?
I’m incredibly proud of our team. Their genuine warmth and dedication are what make this place so special. Beyond that, our commitment to sustainability and our ongoing efforts to support the local community. A recent example is our involvement in the refurbishment of the Soufrière Hospital, a project that reflects our deep connection to the island and its people. It's rewarding to see how we can create lasting impact both within the resort and beyond.
What NEW THINGS CAN WE EXPECT IN 2025 & BEYOND?
We’re always evolving. In 2025, guests can expect exciting new wellness programs and partnerships, elevated culinary offerings, and enhancements to our guest experiences. Most recently, we opened our new ice bath recovery center, with a focus on guest performance, recovery, and rejuvenation.
